Onion Egg Frittata (Print Version)

Sweet onions and fluffy eggs get together with a sprinkle of herbs for the ultimate comfort food—super versatile, goes with any meal.

# Ingredients:

01 - 0.25 cup chopped fresh herbs (parsley or thyme)
02 - 0.25 teaspoon freshly ground black pepper
03 - 0.5 teaspoon salt, divided
04 - 2 tablespoons olive oil
05 - 2 medium yellow onions, thinly sliced
06 - 6 large eggs

# Steps:

01 - Give it a few minutes to chill before you cut it up. Grab a slice while it’s still nice and warm for the best taste and texture.
02 - Slide your skillet into the oven. Let it bake for 20 to 25 minutes, just until the center’s set but still a bit soft.
03 - Pour the egg blend right over your caramelized onions. Give it an easy stir so onions and eggs mix well in the pan.
04 - Grab a bowl and toss in your eggs with the leftover salt, pepper, and plenty of fresh herbs. Whisk it all together until smooth.
05 - Heat some olive oil in a big oven-ready pan on med heat. Toss in your onions and half the salt, then keep cooking—stir every now and then—until the onions go deep golden brown. Could take around 15 to 20 minutes and your kitchen will smell amazing.
06 - Set your oven to 175°C so it’ll be hot when you need it.
