Peach Cinnamon Fluffy (Print Version)

Fluffy golden pancakes full of peaches and cinnamon, perfect for slow mornings.

# Ingredients:

01 - 150 g fresh peaches, thinly sliced
02 - 240 ml milk (whole or almond)
03 - 1 large egg
04 - 130 g all-purpose flour
05 - 30 g melted butter or coconut oil
06 - 15 g baking powder
07 - 25 g granulated sugar
08 - 1 g salt
09 - 1 g ground cinnamon

# Steps:

01 - Pop those pancakes onto some plates while they're nice and hot. Top with syrup or a dusting of powdered sugar if you want. Dive in and enjoy.
02 - Scoop about 120 ml of the batter onto your preheated pan for each pancake. Let it cook for about two minutes until you see bubbles pop up, then flip and let the other side get that golden color for another minute.
03 - Get your non-stick skillet or griddle heated over medium heat. Give the surface a quick grease so things don't stick.
04 - Toss your peach slices into the batter, mixing just enough so they're everywhere but don't overdo it.
05 - Pour your bowl of wet stuff into the dry mix. Stir until you get a smooth batter — don't stir too much, or your pancakes will turn tough.
06 - In another bowl, crack the egg, dump in the milk, and add the melted butter. Give it all a good whisk until it looks well mixed.
07 - Go ahead and add the flour, sugar, salt, cinnamon, and baking powder into a large bowl. Use a whisk to combine everything really well so it's all blended together.

01 - Cut the peaches super thin so they cook the same as the pancakes and you get a soft bite.
