Cinnamon Sweet Potatoes Apples (Print Version)

Maple syrup, cinnamon, and pecans take oven-baked sweet potatoes and apples over the top for a can’t-miss side.

# Ingredients:

01 - 2 big apples, cored and peeled, chopped into 2.5 cm chunks
02 - 2 large sweet potatoes, peeled and diced into 2.5 cm pieces
03 - 60 g dried cranberries if you want
04 - 0.25 teaspoon ground black pepper
05 - 1 teaspoon ground cinnamon
06 - 60 ml olive oil
07 - 0.5 teaspoon salt
08 - 60 g chopped pecans (if using)
09 - 2 tablespoons real maple syrup
10 - 0.5 teaspoon ground nutmeg
11 - 0.5 teaspoon ground ginger

# Steps:

01 - Take out of the oven and let it chill for 5 minutes. Dish it up while it's still nice and warm.
02 - Toss on the pecans and cranberries for the last 5 minutes in the oven if you like the crunch and chew.
03 - Pop the pan in your oven. Let it bake for 25 to 30 minutes. Give everything a mix halfway so it all cooks through and starts to get brown on the edges.
04 - Scoot your coated sweet potato and apple bits onto your lined baking sheet. Spread ’em out so they’ve got space.
05 - Drizzle the spice mix over all your veggies and fruit, then toss them around until they’re all coated evenly.
06 - Grab a small bowl and whisk olive oil, maple syrup, cinnamon, nutmeg, ginger, salt, and pepper until it comes together.
07 - Dump the apple and sweet potato chunks into a big mixing bowl.
08 - Set your oven to 200°C. Cover a big baking tray with parchment paper to keep things from sticking.

# Notes:

01 - Chop your apples and sweet potatoes into pieces about the same size so everything cooks evenly.
02 - Give it a gentle spicy kick with a little cayenne pepper if you want.
03 - Great with roasted turkey or pork chops, especially during fall.
04 - You can prep this a day early. Just heat it back up before eating for the best flavor.
05 - Skip the cranberries and pecans and it'll still turn out great.
06 - If you don’t have maple syrup, swap in some honey instead.
