Chicken Peach Chipotle (Print Version)

Grilled chicken loaded with peach-chipotle sauce brings a punch of sunshine and fire to every bite.

# Ingredients:

→ Chicken

01 - 4 chicken breasts, no skin or bones (about 680g)

→ Peach Chipotle Sauce

02 - 2 peaches, ripe, diced and peeled
03 - 2 chipotle chilies in adobo sauce
04 - 2 cloves garlic, chopped
05 - 2 tablespoons honey
06 - 2 tablespoons soy sauce, low sodium
07 - 2 tablespoons lime juice, freshly squeezed

# Steps:

01 - Turn your grill up to medium-high and let it heat until it's ready to do the job right.
02 - Toss diced peaches, chipotle peppers, garlic, honey, lime juice, and soy sauce into a blender. Pulse until everything's totally smooth.
03 - Drench chicken breasts in half your peach chipotle sauce. Every bit should get covered. Let it chill and soak for at least half an hour.
04 - Take the chicken out of its marinade and throw that marinade away. Place chicken on your hot grill and cook about 6-7 minutes each side. You're looking for an internal temp of 75°C.
05 - Spread the leftover sauce over the chicken once it’s almost cooked through. That’ll give it tons of flavor and keep it juicy.
06 - Serve the chicken fresh off the grill. Add extra peach chipotle sauce if you want even more kick.

# Notes:

01 - Want bigger flavors? Get your marinade going early and let the chicken sit in it for a couple hours in the fridge.
02 - Keeping your grill steady on the heat gives you great char and keeps the chicken nice and juicy.
