Pile roasted veggies and chicken on plates, pour on more barbecue sauce if you want, and enjoy while it's warm.

Pop the tray in your hot oven for 25 to 30 minutes. You want the chicken’s inside to hit 75°C. Halfway through, brush with any barbecue sauce you kept back if you like.

Scatter those chopped peppers and onion pieces all around the chicken breasts on your tray.

Paint lots of barbecue sauce on the chicken. Hang onto some sauce for brushing later.

Give the chicken a pat down with a paper towel. Sprinkle on the salt and pepper both sides, then drizzle the olive oil over everything.

Crank the oven up to 200°C. Spray or brush a baking sheet lightly using some oil so nothing sticks.
