BBQ Chicken Pan (Print Version)

Throw chicken and mixed veggies on a baking sheet with barbecue sauce. It’s fast, super tasty, and hits the table in about 40 minutes.

# Ingredients:

→ Vegetables

01 - 2 bell peppers, any colour you like, roughly chopped
02 - 1 red onion, sliced thin

→ Seasonings

03 - 1 teaspoon salt
04 - 0.5 teaspoon black pepper, ground

→ Proteins

05 - 4 chicken breasts, no bones or skin (about 680 grams total)

→ Sauces & Oils

06 - 2 tablespoons olive oil
07 - 240 millilitres barbecue sauce, ready-made or homemade

# Steps:

01 - Pile roasted veggies and chicken on plates, pour on more barbecue sauce if you want, and enjoy while it's warm.
02 - Pop the tray in your hot oven for 25 to 30 minutes. You want the chicken’s inside to hit 75°C. Halfway through, brush with any barbecue sauce you kept back if you like.
03 - Scatter those chopped peppers and onion pieces all around the chicken breasts on your tray.
04 - Paint lots of barbecue sauce on the chicken. Hang onto some sauce for brushing later.
05 - Give the chicken a pat down with a paper towel. Sprinkle on the salt and pepper both sides, then drizzle the olive oil over everything.
06 - Crank the oven up to 200°C. Spray or brush a baking sheet lightly using some oil so nothing sticks.

# Notes:

01 - Let the chicken sit out for 3 to 5 minutes once baked to help keep it juicy.
02 - For way more flavour, let your chicken hang out in some barbecue sauce for a couple hours before you cook it.
