Banana Oat Snack Balls (Print Version)

# Ingredients:

01 - 1/2 cup pecans
02 - 1/4 teaspoon vanilla extract
03 - 1 teaspoon ground cinnamon
04 - 1/2 cup mashed banana (about 1 banana)
05 - 2 cups rolled oats (old fashioned)
06 - 1/4 teaspoon salt
07 - 1/3 cup pure maple syrup
08 - 1/2 cup almonds

# Steps:

01 - Throw everything into your food processor, then pulse it for about 10 seconds. Scrape the sides down if needed and blend again. Stop when the texture is mostly smooth with just a little bit of crunch left. Keep going until it starts to roll inside the processor.
02 - Take a medium cookie scoop to grab some dough. Roll it into a ball with your hands and set it onto a parchment-lined tray or plate. Do this until you've used up all the mix.
03 - Pop the energy balls into the fridge for around 30 minutes so they can set properly. After chilling, dig in!

# Notes:

01 - If your energy balls are falling apart, the mixture probably needs more time in the food processor to get finer.
02 - Oats soak up the maple syrup over time, so the balls will firm up naturally.
