Start by heating olive oil in a pan on high. Brown the beef roast well on every side until it’s got a nice sear.

Put the browned beef in a Dutch oven. Pour in 237 ml beef broth. Cover and let it gently simmer for 2 to 2.5 hours till it’s super tender.

Melt butter in a saucepan over medium heat. Whisk in flour to create a thick paste. Slowly pour in 474 ml beef broth along with Worcestershire sauce. Keep stirring until it thickens up. Season with salt and pepper to your liking.

Take the beef off the heat and let it chill for a few minutes. Cut thin slices across the grain for the best texture.

On each plate, put a piece of white bread. Top that with sliced beef and a big spoon of mashed potatoes. Pour hot gravy all over.

If you want, sprinkle fresh parsley on top and serve right away.
