Set oven to 200°C (400°F) to get it ready.

Slice beef into strips about half an inch thick. If using bacon, chop the slices into thirds.

Put chopped herbs inside each date. You can wrap a bacon piece around it before wrapping with beef strips if you want.

Sprinkle salt and pepper on each beef-covered date generously.

Place the stuffed dates seam-side down on a baking sheet lined with parchment. Bake 20-25 minutes until beef is done and a bit crispy around the edges.

Serve warm and drizzle any pan juices over if you like.
