Soft beef wraps juicy dates stuffed with herbs and optional smoky bacon for a great flavor mix.

# Ingredients You'll Need:

→ Meat

01 - Thin slices of 450 grams beef sirloin or tenderloin

→ Fruits

02 - 12 pitted Medjool dates

→ Extras

03 - 6 bacon slices cut into three pieces
04 - 2 teaspoons chopped fresh thyme or rosemary

→ Spices

05 - Salt and black pepper as you like

# Detailed Preparation Steps:

01 - Set oven to 200°C (400°F) to get it ready.
02 - Slice beef into strips about half an inch thick. If using bacon, chop the slices into thirds.
03 - Put chopped herbs inside each date. You can wrap a bacon piece around it before wrapping with beef strips if you want.
04 - Sprinkle salt and pepper on each beef-covered date generously.
05 - Place the stuffed dates seam-side down on a baking sheet lined with parchment. Bake 20-25 minutes until beef is done and a bit crispy around the edges.
06 - Serve warm and drizzle any pan juices over if you like.

# Helpful Tips:

01 - To keep everything together, use toothpicks on the beef-wrapped dates.
02 - Bacon adds smokiness but feel free to skip it for a lighter dish.
03 - Keep an eye on cooking time depending on how thick your beef strips are.
