Got fresh blueberries? They'll need to be dehydrated. Rinse and pat them dry using some paper towels. Turn your oven on to 225°F (110°C), spread parchment paper over baking sheets, and lay the berries out in one layer. Give them 4 hours to bake.
02 -
Grab a big mixing bowl. Toss in your oats, flax seeds, blueberries (use dried or your own fresh batch), coconut flakes, cinnamon, dark chocolate chips, and protein powder (only if you want to). Give it a good stir to combine.
03 -
Pour honey, Pichuberry Puree, vanilla extract, and cashew butter into the mixed dry batch. Use a spatula (or just your hands) to thoroughly combine everything. It should feel sticky and hold together.
04 -
Line a sheet pan with wax or parchment paper. Use a small cookie scoop to grab about 1 1/2 tablespoons of the mix, pressing it into the scoop to pack tightly. Pop it out and shape each into a ball before putting it on the paper-lined pan.
05 -
Let the shaped bites sit out for an hour to hold their form. Need them quicker? Stick them in the freezer for 30 minutes instead.
06 -
Keep them in an airtight container—they'll be good for weeks. Want longer storage? Freeze them, no problem.
