Oat Blueberry Bites (Print Version)

Tasty no-bake bites that bring blueberry muffin flavors into compact, nutritious snacks made with oats and nut butter.

# Ingredients:

01 - 1 cup dried blueberries or 2 pints fresh blueberries
02 - 1/2 cup unsweetened coconut flakes
03 - 2 cups old-fashioned oats
04 - 3/4 cup whole organic flax seeds
05 - 1 scoop protein powder (optional)
06 - 1 teaspoon ground cinnamon
07 - 1/2 cup dark chocolate chips

08 - 3 tablespoons Pichuberry Puree
09 - 1/3 cup raw honey
10 - 1 cup cashew butter or cookie butter
11 - 1/2 teaspoon vanilla extract

# Steps:

01 - Got fresh blueberries? They'll need to be dehydrated. Rinse and pat them dry using some paper towels. Turn your oven on to 225°F (110°C), spread parchment paper over baking sheets, and lay the berries out in one layer. Give them 4 hours to bake.
02 - Grab a big mixing bowl. Toss in your oats, flax seeds, blueberries (use dried or your own fresh batch), coconut flakes, cinnamon, dark chocolate chips, and protein powder (only if you want to). Give it a good stir to combine.
03 - Pour honey, Pichuberry Puree, vanilla extract, and cashew butter into the mixed dry batch. Use a spatula (or just your hands) to thoroughly combine everything. It should feel sticky and hold together.
04 - Line a sheet pan with wax or parchment paper. Use a small cookie scoop to grab about 1 1/2 tablespoons of the mix, pressing it into the scoop to pack tightly. Pop it out and shape each into a ball before putting it on the paper-lined pan.
05 - Let the shaped bites sit out for an hour to hold their form. Need them quicker? Stick them in the freezer for 30 minutes instead.
06 - Keep them in an airtight container—they'll be good for weeks. Want longer storage? Freeze them, no problem.
