Broccoli Waldorf Salad (Print Version)

# Ingredients:

01 - 6 cups broccoli florets (32 oz bag pre-cut florets)
02 - ½ cup sharp cheddar cheese
03 - 1 small red onion
04 - 2 cups diced Rockit apples
05 - ¾ cup plain non-fat Greek yogurt
06 - 2 tablespoons light mayonnaise
07 - ½ teaspoon salt
08 - ½ teaspoon dried parsley

# Steps:

01 - If your broccoli isn’t already cut into florets, chop into bite-sized pieces. For pre-cut bags, dice larger pieces. Finely dice the red onion. Dice the Rockit apples into small pieces.
02 - Combine broccoli florets, diced red onion, diced apples, and shredded sharp cheddar cheese in a large mixing bowl.
03 - In a smaller bowl, mix together Greek yogurt, light mayonnaise, salt, and dried parsley until fully combined.
04 - Add the dressing to the large mixing bowl and toss until all broccoli florets are evenly coated.
05 - Serve immediately or refrigerate in an airtight container for up to 5 days.

# Notes:

01 - Store the salad in an airtight container for up to 5 days. Without lettuce, it holds up as leftovers without getting soggy.
02 - To avoid mess when chopping broccoli, cut at the stems and keep the knife on the stalk portion to minimize shredding.
