If your broccoli isn’t already cut into florets, chop into bite-sized pieces. For pre-cut bags, dice larger pieces. Finely dice the red onion. Dice the Rockit apples into small pieces.

Combine broccoli florets, diced red onion, diced apples, and shredded sharp cheddar cheese in a large mixing bowl.

In a smaller bowl, mix together Greek yogurt, light mayonnaise, salt, and dried parsley until fully combined.
