Line your pans with parchment first. Then turn the oven on to 175°C.

In a bowl, toss together baking soda and flour with a whisk.

Using a mixer or whisk, whip butter and brown sugar till they're fluffy. Add the egg and mix until it's all smooth.

Pour in the maple syrup and vanilla. Mix it well so it's nice and even.

Add the dry mix bit by bit into the wet stuff. Stir gently until just mixed—don’t overdo it or the dough gets tough.

Place spoonfuls of dough onto your lined pans. Keep about 5 centimeters space between each.

Pop them in the oven for 10 to 12 minutes until the edges are golden but the centers stay soft. Let them cool a bit before eating.
