Carrot Cake Balls (Print Version)

Quick no bake treats made with dates, carrots, and crunchy nuts. Awesome for breakfast on the go or an easy snack any day.

# Ingredients:

→ Base

01 - 100 grams Medjool dates, pits removed
02 - 100 grams carrots, grated super fine
03 - 200 grams old-fashioned oats

→ Nuts and Seeds

04 - 14 grams flaxseed, ground
05 - 50 grams chopped walnuts

→ Flavoring and Coating

06 - A pinch of salt
07 - 0.5 grams ground ginger
08 - 0.5 grams nutmeg, ground
09 - 2 grams cinnamon powder
10 - 5 millilitres vanilla essence
11 - 20 grams shredded coconut, plus more for rolling

# Steps:

01 - Spread the finished bites on some parchment. Stick them in the fridge. Let them chill for about half an hour so they don’t fall apart.
02 - For an extra hint of coconut, roll each ball in some more shredded coconut if you’re in the mood.
03 - Scoop out twelve even chunks. Roll them in your hands to turn them into neat, tight balls.
04 - Now dump in the grated carrots, flax, vanilla, cinnamon, nutmeg, ginger, salt, plus the coconut. Give it all a whirl until you can’t see loose bits in the bowl. Scrape down the sides whenever needed.
05 - Toss the dates into the processor next. Run until everything turns sticky and blends together.
06 - Start by tossing your oats and walnuts in a food processor. Blend until the stuff looks like fine crumbs.

# Notes:

01 - A food processor works best here. If you only have a blender, do a little bit at a time. The texture might be a bit different.
02 - Keep these bites in a sealed container in your fridge, and they’ll stay fresh for about 7 days.
