Spread the finished bites on some parchment. Stick them in the fridge. Let them chill for about half an hour so they don’t fall apart.

For an extra hint of coconut, roll each ball in some more shredded coconut if you’re in the mood.

Scoop out twelve even chunks. Roll them in your hands to turn them into neat, tight balls.

Now dump in the grated carrots, flax, vanilla, cinnamon, nutmeg, ginger, salt, plus the coconut. Give it all a whirl until you can’t see loose bits in the bowl. Scrape down the sides whenever needed.

Toss the dates into the processor next. Run until everything turns sticky and blends together.

Start by tossing your oats and walnuts in a food processor. Blend until the stuff looks like fine crumbs.
