Carrot Potato Soup (Print Version)

Soft and creamy carrot potato soup, gently seasoned. Awesome with salad or warm bread on the side.

# Ingredients:

→ Seasonings and Garnishes

01 - 60 grams shredded cheddar cheese, throw in if you like
02 - 0.5 teaspoon smoked paprika, up to you
03 - 0.5 teaspoon dried or fresh thyme, plus more to toss on top
04 - 0.5 teaspoon black pepper, cracked fresh
05 - 1 teaspoon salt, more or less as you like

06 - 30 grams butter or go with olive oil

→ Liquids

07 - 240 millilitres milk or try heavy cream
08 - 1 litre chicken or veggie broth

→ Base Vegetables

09 - 2 garlic cloves, finely chopped
10 - 1 small onion, diced up
11 - 3 medium potatoes, peeled and cut into cubes
12 - 3 large carrots, peeled and chopped up

# Steps:

01 - Dish the soup into serving bowls, scatter some thyme, a pinch of black pepper, and more cheese if you’re feeling it. Enjoy while it’s hot.
02 - Blend in the milk or cream. Gently warm the soup—don’t let it start bubbling. Taste it, add more salt or pepper if you want. You can stir in cheese here for a richer flavor—just let it melt in.
03 - Grab an immersion blender and blend everything right in the pot till it’s totally smooth. If you’d rather, you can carefully scoop it into a regular blender and work in batches, then pour it back into the pot.
04 - Pour the broth over, crank up the heat to get it bubbling, then drop the heat down and let it cook, uncovered, for about 20–25 minutes. Check that the carrots and potatoes are soft—they’ll be easy to poke with a fork.
05 - Toss in the potatoes and carrot chunks. Sprinkle on pepper, salt, thyme, and smoked paprika if you’re using it. Stir everything together.
06 - Drop butter or olive oil into a big soup pot and warm it over medium. Toss in the onions and cook till they soften—about 3 minutes. Add garlic and cook for a quick 30 seconds.

# Notes:

01 - For a totally plant-based bowl, just swap dairy for oat or soy milk and grab olive oil instead of butter.
02 - If you’re into a chunkier texture, try mashing a few potatoes by hand and leave the rest unblended.
03 - Want a bit of heat? Add a touch of cayenne or chili flakes.
04 - Need more protein? Stir in some cooked chicken or lentils at the end.
