Taste and then toss in salt and pepper till it feels just right.

Take the immersion blender and zap the mix till it’s as smooth as you want.

Stir cheddar and cream into the pot. Keep mixing till it’s all melted and creamy.

Pour veggie broth in and bring it to a soft bubble. Let it cook till broccoli feels soft, about 10 minutes.

Chuck the broccoli in and cook for 4 to 5 minutes, stirring now and then.

Drop in the minced garlic and cook for about a minute till you can smell it.

Warm some olive oil in a large pot over medium heat. Toss in the chopped onions with a pinch of salt and fry till soft, around 5 minutes.
