# Ingredients You'll Need:

→ Vegetables

01 - 2 cloves garlic, finely chopped
02 - 480 g broccoli florets, fresh
03 - 1 medium onion, chopped

→ Dairy

04 - 200 g sharp cheddar cheese, shredded
05 - 240 ml heavy cream

→ Liquids

06 - 960 ml veggie broth

→ Oils

07 - Olive oil as needed for frying

→ Seasonings

08 - Black pepper, added to taste
09 - Salt, added as you like

# Detailed Preparation Steps:

01 - Taste and then toss in salt and pepper till it feels just right.
02 - Take the immersion blender and zap the mix till it’s as smooth as you want.
03 - Stir cheddar and cream into the pot. Keep mixing till it’s all melted and creamy.
04 - Pour veggie broth in and bring it to a soft bubble. Let it cook till broccoli feels soft, about 10 minutes.
05 - Chuck the broccoli in and cook for 4 to 5 minutes, stirring now and then.
06 - Drop in the minced garlic and cook for about a minute till you can smell it.
07 - Warm some olive oil in a large pot over medium heat. Toss in the chopped onions with a pinch of salt and fry till soft, around 5 minutes.

01 - If you want it creamier, blend it longer. You can also sprinkle a bit of nutmeg on top and add extra cheddar or crunchy croutons.
