01 - 9 oz cheese tortellini
02 - 1 lb ground beef

11 - 1 cup shredded mozzarella cheese
12 - 1 cup shredded cheddar cheese

# Steps:

01 - Cook tortellini according to package directions. Drain and set aside.
02 - In a large skillet over medium heat, brown ground beef, breaking apart while cooking. Drain excess fat.
03 - Add onion and garlic to beef. Cook 2-3 minutes until onion softens.
04 - Stir in chili powder, cumin, paprika, salt, and pepper. Cook 1 minute to toast spices.
05 - Add enchilada sauce and simmer 5 minutes to blend flavors. Add cooked tortellini and toss to coat.
