Cut washed and dried zucchinis into strips about half an inch thick, slicing along their length.

In a small bowl, stir together the melted butter, garlic, Italian herbs, salt, and pepper until smooth.

Place zucchini slices on parchment paper on a baking tray. Generously brush each one with the butter mix.

Pop the tray in an oven heated to 200 degrees Celsius. Let them bake for 12 to 15 minutes until soft but still holding shape.

Scatter the mozzarella and Parmesan evenly on top of the zucchinis. Bake again for 5 more minutes until the cheese melts nicely.

Switch the oven to broil and toast the cheese for 1 to 2 minutes so it turns golden and crispy. Keep a close eye to stop burning.

Sprinkle the fresh parsley over the hot zucchini slices and dig in right away.
