Tzatziki Chicken Bowls (Print Version)

Juicy chicken with creamy yogurt dip over rice and all the best Mediterranean toppings makes every bite pop with flavor.

# Ingredients:

→ Chicken Marinade

01 - Salt and black pepper to taste
02 - 1 teaspoon dried oregano
03 - 1 teaspoon ground cumin
04 - 2 teaspoons smoked paprika
05 - 3 garlic cloves, minced
06 - 45 ml freshly squeezed lemon juice
07 - 60 ml olive oil
08 - 680 g chicken breast or thigh pieces, skinless and boneless

→ Tzatziki Sauce

09 - Salt and black pepper to taste
10 - 1 teaspoon dry dill or 15 ml chopped fresh dill
11 - 15 ml olive oil
12 - 15 ml lemon juice, just squeezed
13 - 1 garlic clove, minced
14 - 1 cucumber, grated and liquid squeezed out
15 - 240 g Greek-style yogurt

→ Bowl Components

16 - 40 g crumbled feta cheese
17 - 40 g olives (Kalamata), pitted and sliced
18 - 15 g parsley, chopped up
19 - 40 g chopped red onion
20 - 1 diced cucumber
21 - 150 g cherry tomatoes, cut in half
22 - 320 g cooked basmati rice

# Steps:

01 - Scoop rice into each bowl first. Add sliced chicken strips, then pile on tomatoes, cucumber pieces, onion, parsley, olives, and a sprinkle of feta. Spoon some tzatziki over everything. Fresh herbs make a great garnish if you want.
02 - Stir the yogurt, grated and squeezed cucumber, garlic, lemon juice, olive oil, dill, salt, and pepper in a medium bowl. Cover and chill it until you’re ready to serve.
03 - Heat up your grill, grill pan, or skillet to medium high. Take chicken from the marinade and cook on both sides for 5 to 7 minutes until it reaches 75°C inside. Let it rest, then slice it up.
04 - Put your chicken pieces into the marinade and turn them so they’re all coated well. Cover and let it soak in the fridge for at least half an hour, more time if you can for extra flavor.
05 - Mix olive oil, lemon juice, garlic, all your spices, and salt and pepper in a roomy bowl. Whisk until it all comes together.

# Notes:

01 - Letting your chicken marinate overnight and resting it before you cut it means you’ll get juicier pieces.
02 - Swap the rice out for cauliflower rice or leafy greens if you want to cut down on carbs.
