Put honey, cumin, garlic, chipotle sauce, olive oil, salt, and pepper in a bowl. Stir well so everything blends together.

Cover the chicken cubes with the marinade. Mix thoroughly, then pop it in the fridge for half an hour or more.

Turn the grill to medium-high heat and let it warm up.

Stick the marinated chicken pieces evenly onto the skewers you soaked.

Lay the skewers on the grill. Turn them now and then and cook 10 to 15 minutes until the inside hits 74°C.

Take the skewers off and rest them for 5 minutes so the juices stay locked in before eating.
