Mix the peanut butter and powdered sugar until you get a thick dough. Roll it into a dozen tiny balls about a teaspoon each. Pop them in the freezer for 15 to 20 minutes.

In a bowl, stir flour, cocoa, baking soda, and salt. In another bigger bowl, beat the softened butter with both sugars until light and fluffy. Mix in the egg and vanilla till smooth. Slowly add the dry mix, stirring until soft dough forms, then fold in the chocolate chips.

Take around 22 grams of dough (about 1½ tablespoons). Flatten it a bit, then plop a frozen peanut butter ball in the middle. Wrap the dough all around and roll into a neat ball. Put them on a lined baking sheet and keep going till you use all the dough and filling.

Heat the oven to 175°C. Bake for 9 to 11 minutes. Let cookies chill on the sheet for 5 minutes before moving them to a rack to cool and firm up.
