Chopped Chicken Ranch Sub (Print Version)

Tender grilled chicken, crunchy bacon, and garden veggies minced with ranch and gooey mozzarella on warm, crispy sub rolls.

# Ingredients:

01 - 4 grilled boneless chicken thighs, no skin
02 - 6 thick-cut bacon strips, fried until crispy
03 - 6 tomato slices
04 - 2 cups of chopped lettuce
05 - 1/4 cup of creamy ranch dressing
06 - 1 teaspoon of ground black pepper
07 - 1 teaspoon of table salt
08 - 1/2 cup of mozzarella, shredded
09 - 1 tablespoon of BBQ seasoning mix
10 - 4 sturdy sub rolls, toasted

# Steps:

01 - Rub chicken thighs with BBQ seasoning and grill over medium-high heat until the inside hits 165°F.
02 - Fry bacon strips in a pan until crunchy, and lightly toast the sub rolls on the grill.
03 - Lay shredded lettuce down first on a board. Add the chicken, bacon, and slices of tomato on top. Chop everything up finely, mixing as you go.
04 - Sprinkle the mixture with salt and pepper. Toss in mozzarella cheese and ranch, chopping and mixing thoroughly.
05 - Scoop some of the chopped mixture into each toasted roll and enjoy.
