Start by heating your oven to 160°C.

Coat the roast with salt and pepper all over.

Warm olive oil in a pan over medium-high heat. Brown the roast for about 3 to 4 minutes on each side.

In a bowl, stir together cranberries, balsamic vinegar, brown sugar, and a pinch of salt until mixed well.

Put the browned roast in a pan. Pour the cranberry glaze over it, cover with foil, and cook for 2 hours. Don’t forget to baste sometimes to keep it juicy.

After taking it out, let the roast sit for 10 minutes. Slice and serve with the extra glaze for more flavor.
