Juicy roast beef with a bright cranberry balsamic sauce, great for family dinners or holiday feasts.

# Ingredients You'll Need:

→ Meat

01 - 1.5-1.8 kg beef chuck or sirloin roast

→ Topping

02 - 67 g brown sugar
03 - 120 ml balsamic vinegar
04 - 300 g fresh cranberries

→ Spices

05 - 2.5 ml black pepper
06 - 5 ml salt

→ Cooking

07 - 15 ml olive oil

# Detailed Preparation Steps:

01 - Start by heating your oven to 160°C.
02 - Coat the roast with salt and pepper all over.
03 - Warm olive oil in a pan over medium-high heat. Brown the roast for about 3 to 4 minutes on each side.
04 - In a bowl, stir together cranberries, balsamic vinegar, brown sugar, and a pinch of salt until mixed well.
05 - Put the browned roast in a pan. Pour the cranberry glaze over it, cover with foil, and cook for 2 hours. Don’t forget to baste sometimes to keep it juicy.
06 - After taking it out, let the roast sit for 10 minutes. Slice and serve with the extra glaze for more flavor.

# Helpful Tips:

01 - Basting helps keep your beef juicy during cooking. Resting lets the juices settle so it’s tender. You can add more brown sugar if you want it sweeter.
