01 -
Heat your oven to 175°C. Grease or line a 23x13 cm loaf pan with parchment paper.
02 -
In a medium bowl, whisk flour, salt, and baking soda. Keep it ready for later.
03 -
In a big bowl, beat the softened butter with sugar till fluffy. Add eggs one by one and blend each time. Stir in vanilla at the end.
04 -
Gently fold in the mashed bananas so everything is mixed well.
05 -
Slowly fold the dry stuff into the wet mix just until combined. Don’t overdo it to keep things soft.
06 -
In another bowl, mix softened cream cheese, sugar, and egg until smooth.
07 -
Stir together the cinnamon and brown sugar in a small dish.
08 -
Put half the banana batter in the pan and smooth it out. Spread the cream cheese mix on top. Add the rest of the banana batter over that.
09 -
Sprinkle the cinnamon sugar mix evenly on the final banana batter layer.
10 -
Bake for 50 to 60 minutes. Check with a toothpick in the middle; if it comes out clean, it’s done.
11 -
Let it cool for 10 minutes in the pan. Then move it to a wire rack until completely cool before cutting.
