Lay some parchment or a silicone liner on your sheet pan. Crank the oven to 200°C to heat up.

Peel the apple, toss the core, and chop the fruit into thick matchsticks (aim for them to be about the same size).

Scoop the panko into a shallow dish so it’s easy to grab handfuls when you’re coating.

In a separate shallow bowl, stir together the flour, white sugar, brown sugar, cinnamon, and nutmeg until everything looks blended.

Crack your egg into a small bowl and whisk it pretty well so there isn’t any streaky white or yolk left.

Start dipping your apple sticks into the flour and sugar bowl, shake off whatever doesn’t stick.

Now move those coated sticks into the egg bowl, making sure they’re fully covered but not dripping.

Roll each apple stick in panko crumbs, pressing gently to make sure it all sticks on well.

Space all the apple fries out on your lined sheet pan. Don’t let them touch, so every edge crisps up.

Pop them in the oven. Bake for about 20 to 25 minutes until they turn golden and crunchy on the edges.

Take the pan out and leave the fries alone for around 5 minutes to let them set and get their crunch.

Dig in while they’re warm. Drizzle some caramel or scoop on ice cream if that sounds good to you.
