Warm the olive oil in a pan over medium-high heat. Sprinkle salt and pepper on your beef, then brown it on all sides. Put the beef into your slow cooker.

Using the same pan, cook the onion and garlic until they’re soft and smelling good. Add these to the slow cooker.

Mix the broth, onion soup mix, Worcestershire sauce, and flour in a bowl. Pour that over the beef and veggies in the slow cooker.

Cook on low for 6-8 hours or on high for 3-4 hours till the beef feels tender.

Prepare egg noodles according to their package instructions around half an hour before eating. Drain and keep warm.

Put the beef and gravy over the noodles and, if you want, sprinkle with parsley.
