Get a non-stick pan warm over medium heat until it’s ready.

Spread butter all over one side of each sourdough slice.

Put two bread slices in the pan with the buttered side down.

Evenly place mozzarella, cheddar, and pickles on the bread in the pan. You can also add Dijon mustard over the cheese if you want.

Put the rest of the bread slices on top with buttered side facing up.

Cook until the bottom is golden, flip it over, and keep cooking until the cheese melts and both sides turn crispy and golden.

Take it off the heat, cut the sandwiches in half, and enjoy while it’s warm.
