Doritos Chicken Bake (Print Version)

Mix of crisp Doritos, melty cheese, sweet corn, and tender chicken finished off golden and bubbly in the oven.

# Ingredients:

→ Dairy and Cheese

01 - 200 g shredded Mexican cheese blend for mixing
02 - 225 g chive whipped cream cheese
03 - 100 g more shredded Mexican cheese blend for the top

→ Protein

04 - 450 g cooked rotisserie chicken, torn into pieces

→ Vegetables

05 - 1 bunch green onions, sliced—set some aside for later
06 - 250 g canned corn, drained and ready

→ Pantry

07 - 300 g condensed chicken soup
08 - 1 teaspoon garlic powder
09 - 1/2 teaspoon black pepper
10 - 1/2 teaspoon table salt

→ Snacks

11 - 90 g Doritos, crushed up

# Steps:

01 - Turn the oven on to 200°C. Let it come up to temp while you get everything else ready.
02 - Beat the chive cream cheese and chicken soup together in a big bowl. Don’t stop ‘til it looks fluffy and even.
03 - Keep aside a handful of green onions for later. Throw the rest of the green onions, your chicken, corn, most of the Mexican cheese, salt, pepper, and garlic powder into the bowl. Stir it all up so you get a nice mix.
04 - Grab a 33 x 23 cm tray and grease it up. Scoop in your chicken mix and spread it smooth to the sides.
05 - Sprinkle those crushed Doritos evenly over the top, add that last 100 g of cheese, and finish off with the green onions you saved.
06 - Stick your dish in the oven. Bake for about 17-20 minutes, or until the cheese on top is bubbling and golden.
07 - Take it out, let it cool a minute or two, and serve while it’s still hot.

01 - Using rotisserie chicken brings big flavor fast, so you spend less time cooking.
