Finish by adding ice cubes to your glasses or mix it all in the pitcher before pouring. Top each glass with a bit of dragonfruit, some mint, and a slice of lemon if you like.

Let your pitcher hang out in the fridge for no less than 2 hours so everything gets cold and the tastes mix nicely.

Pour the dragonfruit mix through a fine strainer straight into your big pitcher. Give it a really good stir to mix up the color and flavor.

Grab a big pitcher and add in your lemon juice, the simple syrup you made and whatever cold water you have left. Stir until it all comes together.

Put your sugar and 240 ml of your cold water into a saucepan. Heat on medium, keep stirring till the sugar vanishes. Take it off the heat and let it cool.

In a blender, whizz up the chopped chunks of dragonfruit with some warm water until you have a silky smooth mix.
