Garlic Butter Steak Bites (Print Version)

Tender steak pieces seared to perfection, bathed in garlic butter and served with parmesan cream sauce over cheesy mashed potatoes.

# Ingredients:

01 - 2 lbs steak filet, ribeye, or sirloin
02 - 4-5 tablespoons avocado oil

→ Parmesan Cream Sauce

03 - 5 tablespoons butter, divided
04 - 10 cloves garlic, minced and divided
05 - 1.5 cups heavy cream
06 - 2 green onions, diced (green and white parts)
07 - 1 teaspoon red pepper flakes
08 - 2/3 cup parmesan cheese, grated, shredded, or shaved

→ Cheesy Mashed Potatoes

09 - 4 lbs russet potatoes
10 - 1 cup half and half, warmed
11 - 6 tablespoons salted butter, melted
12 - 3/4 cup monterey jack cheese, shredded
13 - 1 teaspoon garlic powder
14 - 3/4 teaspoon salt
15 - 1/2 teaspoon ground black pepper

→ Homemade Blackened Seasoning

16 - 2 tablespoons smoked paprika
17 - 1 tablespoon cayenne pepper
18 - 1 tablespoon onion powder
19 - 2 teaspoons garlic powder
20 - 1 teaspoon ground black pepper
21 - 1 teaspoon salt
22 - 1/2 teaspoon dried thyme
23 - 1/2 teaspoon dried oregano

# Steps:

01 - Cut steak into 2-3 inch pieces. Rub evenly with avocado oil and blackened seasoning. Let sit for 10-15 minutes. Peel and quarter potatoes. Soak potatoes in cold water for 10 minutes to remove excess starch, then drain.
02 - Heat 2-3 tablespoons of avocado oil in a large skillet over medium-high heat. Cook steak pieces undisturbed for 2 minutes, then flip and cook for 1 minute more. Lower heat, cook for 1 additional minute, then remove steak to a bowl.
03 - In the same pan, melt 3 tablespoons of butter with 1 tablespoon minced garlic until fragrant. Toss steak in garlic butter to coat, cook 1 more minute, then remove and tent with foil.
04 - In the same skillet, melt 2 tablespoons of butter with the remaining minced garlic until fragrant. Slowly whisk in heavy cream, bringing it to a simmer. Reduce for 3-5 minutes. Add red pepper flakes, scallions, and parmesan cheese. Whisk until sauce thickens. Adjust seasoning with salt and pepper.
05 - Drain boiled potatoes, add melted butter and half and half, and mash until smooth. Mix in monterey jack cheese, garlic powder, salt, and pepper.
06 - Plate the mashed potatoes, top with steak bites, and spoon over the parmesan cream sauce. Serve immediately.
