Comforting slow cooker chicken paired with baby potatoes, fresh herbs, garlic, and Parmesan cheese.

# Ingredients You'll Need:

→ Chicken

01 - 4 skinless chicken breasts without bones

→ Veggies

02 - 3 cloves minced garlic
03 - 2 cups fresh spinach (around 60 grams)
04 - 454 grams baby potatoes, cut in halves

→ Herbs & Spices

05 - 2 tablespoons fresh chopped parsley
06 - 1 teaspoon garlic powder
07 - 1 teaspoon salt
08 - 1 teaspoon dried thyme
09 - 1 teaspoon black pepper
10 - 1 teaspoon dried oregano

→ Cheese

11 - 1 cup Parmesan cheese, grated (about 100 grams)

→ Oils & Broths

12 - 240 milliliters chicken broth
13 - 2 tablespoons olive oil

# Detailed Preparation Steps:

01 - Mix salt, pepper, garlic powder, oregano, and thyme. Spread this mix all over the chicken breasts.
02 - Warm up olive oil in a pan on medium-high heat. Cook chicken breasts 2 to 3 minutes per side until they're golden. Take them off the heat and set aside.
03 - Using the same pan, cook the minced garlic for a minute or two until you smell it.
04 - Place the potato halves inside the slow cooker. Give them a sprinkle of salt and pepper.
05 - Put the browned chicken pieces on top of the potatoes in the slow cooker.
06 - Pour the chicken broth over everything. Then sprinkle the grated Parmesan cheese on top.
07 - Cover it and cook on low for about 6 to 7 hours or high for 3 to 4 hours. The chicken should be cooked through and the potatoes soft.
08 - Half an hour before it's done, add fresh spinach to the slow cooker so it gets soft.
09 - Top the meal with chopped parsley. Serve it warm and you can put lemon wedges on the side if you like.

# Helpful Tips:

01 - Browning the chicken gives it better taste and keeps it juicy. Cook times might change based on your slow cooker model. For a creamier sauce, stir in some butter or cream cheese at the end.
02 - You can swap the spinach for kale or broccoli if you want something different.
