Mix salt, pepper, garlic powder, oregano, and thyme. Spread this mix all over the chicken breasts.

Warm up olive oil in a pan on medium-high heat. Cook chicken breasts 2 to 3 minutes per side until they're golden. Take them off the heat and set aside.

Using the same pan, cook the minced garlic for a minute or two until you smell it.

Place the potato halves inside the slow cooker. Give them a sprinkle of salt and pepper.

Put the browned chicken pieces on top of the potatoes in the slow cooker.

Pour the chicken broth over everything. Then sprinkle the grated Parmesan cheese on top.

Cover it and cook on low for about 6 to 7 hours or high for 3 to 4 hours. The chicken should be cooked through and the potatoes soft.

Half an hour before it's done, add fresh spinach to the slow cooker so it gets soft.

Top the meal with chopped parsley. Serve it warm and you can put lemon wedges on the side if you like.
