Warm up a pan then place zucchini slices flesh side down until golden.

Sprinkle kosher salt on the sliced zucchinis and let them sit for around 15 minutes to pull out excess water.

Heat your oven to 220°C (425°F) so it's ready for baking.

In a small pan, gently warm garlic and crushed red pepper in 2 tablespoons of olive oil until you smell their aroma, then take off the heat.

Put the zucchini pieces flesh side up on a lined baking tray.

Brush the tops of the zucchini steaks with the garlic-infused oil generously.

Pop the tray in the oven for about 8 to 10 minutes until the zucchinis get soft.

Spread mozzarella and Parmesan evenly over the baked zucchinis.

Put under the broiler until the cheese is bubbly, melted, and a little browned.

Sprinkle torn basil leaves on top and if you like, add more crushed red pepper flakes.

Cut zucchinis lengthwise into 4 pieces and lightly score the cut side.
