# Ingredients You'll Need:

01 - 60 ml extra-virgin olive oil, split

→ Cheese

02 - 28 g Parmesan, finely shredded (about half a cup)
03 - 57 g mozzarella, shredded (around half a cup)

04 - Kosher salt
05 - 2 medium zucchinis

→ Herbs

06 - 2 tbsp fresh basil leaves, torn

→ Aromatics

07 - 0.25 tsp crushed red pepper flakes
08 - 4 garlic cloves, finely minced or grated

# Detailed Preparation Steps:

01 - Warm up a pan then place zucchini slices flesh side down until golden.
02 - Sprinkle kosher salt on the sliced zucchinis and let them sit for around 15 minutes to pull out excess water.
03 - Heat your oven to 220°C (425°F) so it's ready for baking.
04 - In a small pan, gently warm garlic and crushed red pepper in 2 tablespoons of olive oil until you smell their aroma, then take off the heat.
05 - Put the zucchini pieces flesh side up on a lined baking tray.
06 - Brush the tops of the zucchini steaks with the garlic-infused oil generously.
07 - Pop the tray in the oven for about 8 to 10 minutes until the zucchinis get soft.
08 - Spread mozzarella and Parmesan evenly over the baked zucchinis.
09 - Put under the broiler until the cheese is bubbly, melted, and a little browned.
10 - Sprinkle torn basil leaves on top and if you like, add more crushed red pepper flakes.
11 - Cut zucchinis lengthwise into 4 pieces and lightly score the cut side.
