Green Cake with Lime Frosting (Print Version)

A vibrant, moist cake bursting with lime flavor, topped with a creamy condensed milk frosting for a refreshing summer treat.

# Ingredients:

01 - 2 large eggs, at room temperature
02 - 180g milk, at room temperature
03 - 75g vegetable oil
04 - 60g freshly squeezed lime juice
05 - 1 tablespoon lime zest
06 - 24g lime-flavored gelatin powder
07 - 180g all-purpose flour
08 - 150g granulated sugar
09 - 8g baking powder
10 - 1g salt

→ Lime Frosting

11 - 397g sweetened condensed milk
12 - 80g freshly squeezed lime juice
13 - 12g lime-flavored gelatin powder
14 - 30g hot water

# Steps:

01 - Line an 8-inch (20cm) square pan with parchment paper and set aside. Preheat the oven to 180°C (350°F) 5 minutes before baking.
02 - In a large bowl, whisk the eggs for 1 minute using a wire whisk. Add the milk, vegetable oil, lime juice, lime zest, and lime-flavored gelatin powder. Whisk until well combined.
03 - Sift the flour, sugar, baking powder, and salt over the wet mixture. Gently whisk until just combined and smooth. Avoid overmixing.
04 - Pour the batter into the prepared pan and bake for 30 minutes or until a toothpick inserted in the center comes out clean. Let the cake cool completely at room temperature.
05 - In a medium bowl, whisk the condensed milk and lime juice until combined. The mixture will thicken slightly due to the lime juice.
06 - Pour the hot water over the lime-flavored gelatin powder and stir until completely dissolved. Add the dissolved gelatin to the condensed milk mixture and stir well.
07 - Spread the lime frosting evenly over the cooled cake. Refrigerate for at least 2 hours before serving.
