Preheat the oven to 375°F (190°C).

Peel and dice the potatoes into small cubes. Chop the onion and mince the garlic cloves.

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until fragrant.

Add the ground beef to the skillet, season with salt, black pepper, dried thyme, and paprika. Cook until browned and cooked through.

Pour in the beef broth, stir well and allow the mixture to simmer for a few minutes. Remove the skillet from the heat.

In a mixing bowl, combine the cooked ground beef mixture with the diced potatoes. Fold in the sour cream and half of the shredded cheddar cheese.

Transfer the mixture to a baking dish and spread it out evenly. Top with the remaining shredded cheddar cheese.

Cover the baking dish with foil and bake in the preheated oven for 30 minutes.

Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
