Get the oven warmed to 175°C and cover two baking trays with parchment.

Put oats, flour, salt, and baking soda in a bowl and stir them well to mix.

In a big bowl, whip the softened butter, honey, and brown sugar till fluffy and light.

Beat the egg and vanilla in with the butter mixture till it’s all smooth.

Slowly add the dry mix into the wet stuff, folding gently so you don’t overwork it.

Drop spoonfuls of the dough on the trays, leaving about 5 cm between each one.

Bake for 10 to 12 minutes until the edges look golden but the centers are still soft.

Move cookies to wire racks and let them cool fully before you eat or pack them away.
