Peach Cheddar Melt (Print Version)

Creamy ricotta, honey, luscious peaches, and tangy cheddar all ooze together in this crispy golden sandwich.

# Ingredients:

→ Sandwich assembly

01 - 2 tablespoons unsalted butter
02 - 2 to 4 tablespoons ricotta cheese
03 - 4 slices white cheddar cheese
04 - 4 slices sourdough bread
05 - 2 peaches, peeled and sliced
06 - 1 tablespoon honey

→ Optional additions

07 - Balsamic glaze
08 - Fresh basil leaves
09 - 4 slices crispy bacon

# Steps:

01 - Slice each sandwich and dig in while they're hot so you get that gooey cheese and crunchy bite.
02 - Lift the bread top real quick and throw on some bacon, a few basil leaves, or swirl over some balsamic glaze if you like. Drop the bread back on.
03 - Start heating up a skillet or panini press on medium low. Put together sandwiches in and let them cook, flipping if needed, till cheese is melty and bread's golden. If the crust browns too fast, turn the heat down.
04 - Spread the butter on the outside sides of the bread. That way, it crisps up nice and even.
05 - Grab your bread. Smear some ricotta on one side of each. Lay peach slices on half the slices, squeeze a bit of honey over them, then top with cheddar and close everything up.
06 - Take off the peach skins and cut the fruit into thin slices. Keep them off to the side until you're ready to pile them on.
