01 - 450 g big shrimp, peeled and cleaned

→ Batter & Seasoning

02 - 60 g corn starch
03 - 1.25 ml salt
04 - 1.25 ml black pepper
05 - One egg white, beaten gently

→ Frying

06 - Oil for frying (vegetable)

→ Sugared Walnuts

07 - 60 g walnut halves
08 - 25 g sugar
09 - 15 ml water

→ Sweet Honey Sauce

10 - 60 ml mayo
11 - 30 ml honey
12 - 15 ml condensed milk with sugar
13 - 5 ml lemon juice

# Detailed Preparation Steps:

01 - Put walnuts, sugar, and water in a pan on medium heat. Stir till the sugar melts and walnuts get a shiny coat. Lay them out on parchment paper to cool off.
02 - Sprinkle salt and pepper on shrimp. Cover them well with corn starch, dip into the egg white, then dust again with corn starch for a thicker crust.
03 - Heat vegetable oil in a wok or pan till it hits 175 to 190°C. Fry shrimp in small batches, about 2 to 3 mins each side till golden. Take them out and drain on paper towels.
04 - Beat mayo, honey, condensed milk, and lemon juice till thick and smooth.
05 - Carefully coat the fried shrimp in the honey sauce. Fold in the cooled sugared walnuts and serve right away for the best crunch.
