# Ingredients You'll Need:

→ Lobster

01 - Chopped cooked lobster meat, 240 ml

→ Dry Mix

02 - Cornmeal, 30 g
03 - Black pepper, 1.25 ml
04 - Baking powder, 2.5 ml
05 - All-purpose flour, 65 g
06 - Salt, 1.25 ml

→ Wet Mix

07 - Melted butter, 60 ml
08 - Milk, 120 ml
09 - Large eggs, 2

→ Topping

10 - Chopped chives, 30 ml
11 - Sour cream, 60 ml
12 - Cream cheese softened, 120 g
13 - Lemon juice, 15 ml

# Detailed Preparation Steps:

01 - Get your oven heating at 175°C. Line your muffin tray with liners so you're ready to go.
02 - Start by stirring all the dry ingredients in a bowl till they're well mixed.
03 - Gather your eggs, milk, and melted butter and whisk them together in another bowl.
04 - Add the dry mix bit by bit to the wet stuff, stirring lightly just till it's mixed.
05 - Gently fold in the lobster chunks and half the chives so they don’t get mashed.
06 - Scoop the batter into your prepared muffin liners, filling each almost full but leaving some room.
07 - Pop the tray in the oven and bake for about 20 to 25 minutes. Check with a toothpick that comes out clean.
08 - Take the muffins out and let them chill completely in the tray before putting on the frosting.
09 - Mix the cream cheese, sour cream, and lemon juice in a small bowl until smooth.
10 - Spread that topping on the muffins once they’re cool. Sprinkle on the rest of the chives and leftover lobster before serving.
