Get your oven heating at 175°C. Line your muffin tray with liners so you're ready to go.

Start by stirring all the dry ingredients in a bowl till they're well mixed.

Gather your eggs, milk, and melted butter and whisk them together in another bowl.

Add the dry mix bit by bit to the wet stuff, stirring lightly just till it's mixed.

Gently fold in the lobster chunks and half the chives so they don’t get mashed.

Scoop the batter into your prepared muffin liners, filling each almost full but leaving some room.

Pop the tray in the oven and bake for about 20 to 25 minutes. Check with a toothpick that comes out clean.

Take the muffins out and let them chill completely in the tray before putting on the frosting.

Mix the cream cheese, sour cream, and lemon juice in a small bowl until smooth.

Spread that topping on the muffins once they’re cool. Sprinkle on the rest of the chives and leftover lobster before serving.
