Put lobster, mashed potatoes, cheese, pepper, and salt into a bowl and stir it all up until smooth.

Roll the mix into small balls or patties about golf ball size.

First dip each ball into the beaten egg then cover them evenly with breadcrumbs.

Heat your oil in a pan on medium heat until it's hot but not smoking.

Fry each croquette for 2-3 minutes on each side until they're golden and warm inside.

Take croquettes out and lay them on paper towels to soak up extra oil.

Serve them hot right away, you can add your favorite dipping sauce if you want.
