Turn on the oven to 175°C and cover a baking tray with parchment paper.

Beat the softened butter with the sugar in a big bowl until it's light and fluffier than before.

Pour in the vanilla and mix it well with the butter and sugar.

In another bowl, toss together the flour, baking soda, and salt so they're spread evenly.

Slowly add the dry mix to the butter combo and keep stirring until the dough feels soft.

Gently fold in the chopped lobster meat till it’s spread all over the dough.

Spoon out dough blobs onto your lined tray with about 5 cm between each. Bake for 12 to 15 minutes until edges turn a light golden color.

Take the tray out and let the cookies rest on it a few minutes before moving them to a wire rack.
