Heat the oven to 200°C and cover a baking tray with parchment paper.

Mix together lobster, cream cheese, mayo, lemon juice, and chives in a bowl until everything’s well combined.

On a floured surface, roll out the thawed puff pastry and cut it into the sizes you like.
