Mini Meatloaf Glaze (Printable Version)

# Ingredients You'll Need:

→ Dairy

01 - 80 ml whole milk
02 - 15 g unsalted butter
03 - 60 g shredded cheddar cheese

04 - 40 g diced bell pepper
05 - 1 tsp minced garlic (about 3 g)
06 - 40 g diced yellow onion

→ Condiments & Sauces

07 - 125 ml ketchup
08 - 125 ml BBQ sauce
09 - 7.5 ml Worcestershire sauce
10 - 1 tsp yellow mustard (5 ml)
11 - 1 tsp ketchup (5 ml)
12 - 1 tsp BBQ sauce (5 ml)

→ Spices

13 - ¼ tsp ground black pepper (around 0.6 g)
14 - ½ tsp salt (around 2.5 g)

→ Baking & Breading

15 - 33 g crushed Ritz or Italian style breadcrumbs

→ Protein

16 - 450 g ground beef (85% lean)
17 - 1 large egg

# Detailed Preparation Steps:

01 - Preheat to 175°C (350°F) so it’s ready to bake.
02 - In a small pan, melt the butter over medium heat. Toss in onions and peppers, let them cook for 4 minutes. Stir in garlic and cook for one more minute. Take off heat and let it cool down.
03 - In a big bowl, beat together egg, milk, mustard, ketchup, BBQ sauce, Worcestershire sauce, cheddar cheese, salt, and pepper until smooth.
04 - Carefully fold in breadcrumbs then the cooled veggies. Finally, add ground beef and mix gently so it stays tender.
05 - Split the meat mix into four equal parts. Make each into a loaf about 13 cm (5 inches) long and put on a lined baking sheet with edges to catch drips. Mix ketchup and BBQ sauce and brush half over each loaf.
06 - Bake for 25 minutes, then take out and carefully move the loaves to a fresh lined pan to drain grease using a spatula without breaking them.
07 - Spread the rest of the glaze over the loaves and bake 15 more minutes till the center hits 71°C (160°F).
08 - If you want, brush a thin coat of ketchup on top before serving. Goes great with mashed potatoes, roasted veggies, or buttered garlic pasta.

01 - Check the meat’s temp hits 71°C to make sure it’s safe to eat.
02 - For less fat, use 90% lean beef or swap for ground turkey or chicken.
03 - Add a pinch of red pepper flakes if you like a tiny kick.
04 - Line your pan with foil and make a foil sling to easily lift loaves off and pour out extra grease.
