Set oven to 175°C. Grease loaf pan 23x13 cm and line it with parchment.

Grate zucchini and squeeze it dry using cloth or paper towel.

Whisk whole wheat and all-purpose flours with baking soda, baking powder, salt, cinnamon, and nutmeg in a bowl.

Beat eggs, sugar, olive oil, and vanilla in a large bowl until smooth.

Stir grated zucchini into the wet mix until spread out evenly.

Fold dry into wet mixture gently until just mixed. Don’t overwork it.

Mix in nuts and chocolate chips if you like.

Put the batter in the pan and even it out on top.

Bake for 50-60 minutes or until a toothpick comes out clean from the center.

Cool in the pan 10 minutes then move to a wire rack to cool completely.
