Pour warm water, sugar, and yeast into a big bowl. Let it sit for 5 to 10 minutes till bubbly.

Mix flour, salt, and melted butter into the yeast liquid. Stir till you get a rough dough.

On a floured spot, knead the dough about 5 minutes until it feels smooth and stretchy.

Put the dough in a greased bowl. Cover with a towel and leave it somewhere warm for around an hour till it doubles.

Heat the oven to 230°C. Line a tray with parchment paper. In a big pot, bring water and baking soda to a strong boil.

Cut the dough into 16 pieces. Flatten each piece, put a mozzarella chunk in the middle, fold over, and pinch into a neat ball.

Carefully put each cheese-filled dough ball into the boiling baking soda water for 30 seconds. Take them out with a slotted spoon and place on the tray.

Sprinkle coarse salt over the pretzels. Bake for 12 to 15 minutes till they turn golden and look awesome.

Brush the warm pretzels with melted butter. Dig in right away with marinara if you want.
