# Detailed Preparation Steps:

01 - Pour warm water, sugar, and yeast into a big bowl. Let it sit for 5 to 10 minutes till bubbly.
02 - Mix flour, salt, and melted butter into the yeast liquid. Stir till you get a rough dough.
03 - On a floured spot, knead the dough about 5 minutes until it feels smooth and stretchy.
04 - Put the dough in a greased bowl. Cover with a towel and leave it somewhere warm for around an hour till it doubles.
05 - Heat the oven to 230°C. Line a tray with parchment paper. In a big pot, bring water and baking soda to a strong boil.
06 - Cut the dough into 16 pieces. Flatten each piece, put a mozzarella chunk in the middle, fold over, and pinch into a neat ball.
07 - Carefully put each cheese-filled dough ball into the boiling baking soda water for 30 seconds. Take them out with a slotted spoon and place on the tray.
08 - Sprinkle coarse salt over the pretzels. Bake for 12 to 15 minutes till they turn golden and look awesome.
09 - Brush the warm pretzels with melted butter. Dig in right away with marinara if you want.

# Helpful Tips:

01 - Keep the water at 43 to 46°C so the yeast wakes up just right.
02 - Kneading well makes the dough soft and stretchy.
03 - Be careful with boiling water to avoid burns while dipping pretzels.
