Scoop cream cheese into a bowl. Add peanut butter, powdered sugar, and some vanilla if you like. Mix it all up until nothing looks lumpy anymore. Stick the mixture in your fridge and let it chill for about 20 minutes so it firms up.

Once the filling's cold, use a spoon or scoop to pull out little bits, shape them into balls, and put them on a tray lined with parchment. Pop the tray in the freezer for half an hour so they're easier to dip.

Pour chocolate chips and coconut oil (or butter) into a microwave-safe bowl or use a double boiler. Warm them up, stirring now and then, till you get a shiny, melted chocolate mess.

Grab the cold balls and dunk each one in your melty chocolate so they're covered all over. Lay them back down on your parchment tray.

Before the chocolate firms up, toss some chopped peanuts over the top if you want. Slide the tray into your fridge and leave them alone until the chocolate goes hard—should take about an hour.
