# Ingredients You'll Need:

→ Main

01 - 1 medium onion chopped fine
02 - 3 minced garlic cloves
03 - 30 ml olive oil

→ Beans & Veggies

04 - 850 g drained and rinsed canned cannellini beans
05 - 710 ml vegetable broth
06 - 820 g canned diced tomatoes with juice

→ Spices

07 - 1 tsp Italian seasoning
08 - Salt and freshly ground black pepper to your liking
09 - Optional 1 tsp red pepper flakes
10 - 1 tsp dried thyme

→ Toppings

11 - 15 g chopped fresh basil leaves
12 - 25 g grated Parmesan cheese

# Detailed Preparation Steps:

01 - Set a large pot on medium heat and warm the olive oil. Throw in the onion and cook till you see it turn clear, about 5 minutes.
02 - Add the minced garlic and cook it just a minute 'til you get the smell.
03 - Stir in the canned diced tomatoes with juice, mix it up with the onion and garlic.
04 - Add the vegetable broth and let it come to a soft simmer.
05 - Put in the cannellini beans, dried thyme, Italian seasoning, salt, and black pepper. Give it a good stir.
06 - Let everything cook gently for 15 to 20 minutes so the tastes mix well.
07 - Take the pot off heat and stir in the Parmesan until it melts completely.
08 - Right before serving, toss in the fresh basil for a burst of flavor.
09 - If you want it spicier, sprinkle red pepper flakes on top however you like.

# Helpful Tips:

01 - Spice it up by adding more red pepper flakes if you like. Blend some of the soup with a hand blender for a smoother feel before adding cheese. Feel free to top with extra Parmesan and basil.
