Peach Lemon Citrus (Print Version)

Chilled peaches and zippy lemon come together for a bright, cool drink that’s just right for hot weather cravings.

# Ingredients:

01 - 100 g fresh peaches, sliced thin
02 - 250 g ice cubes
03 - 120 ml lemon juice, squeezed fresh
04 - 250 g pureed peaches (blend fresh or thawed peaches till smooth)
05 - 60 g white sugar
06 - 60 g honey
07 - 500 ml water

# Steps:

01 - Finish things off by topping each glass with a couple of extra peach slices for a bright look.
02 - Pour the drink into cups. If you like your drinks extra chilly, toss a few more cubes of ice in.
03 - Give everything one last big stir so all the flavors come together nicely.
04 - Try a sip—if you want it sweeter, add more honey or sugar. Stir well until it melts in.
05 - Toss in all the peach slices and give things a gentle stir so they’re mixed through.
06 - Now dump in the ice cubes and let them cool down the pitcher contents.
07 - Splash in the fresh lemon juice, mix it up with the peach and syrup stuff.
08 - Grab a large pitcher and pour in your cooled syrup and pureed peaches.
09 - Peel, slice, and blend up your peaches (or already thawed ones) till they’re completely smooth for the puree.
10 - Let the syrup chill out on the counter for a bit until it isn't hot anymore.
11 - Take the pan off the heat. Stir in both the honey and sugar until you can’t see any grains.
12 - Set a small saucepan over medium. Put in your water and boil it gently.

# Notes:

01 - Wait until the syrup cools off before you add ice or it’ll just get watery.
02 - If you want it silky smooth, run the peach puree through a fine strainer.
03 - Fresh peaches really pack the most flavor, but frozen works fine too.
04 - Taste as you go—add sweetener a bit at a time so it doesn’t end up too sugary.
05 - Try tossing in some fresh mint if you want a refreshing twist on top.
