Scrub the ginger with your hands or a vegetable scrubber. Remove the top, skin, and core of the pineapple, then cut it into chunks.

Break the ginger into small pieces. Blend ginger with some pineapple and a small amount of water to encourage blending. Blend the remaining pineapple. Strain the juice through a fine mesh strainer over a large bowl, pressing with a rubber spatula.

Juice the lemons using your hands or a citrus hand squeezer. Combine the lemon juice and coconut water with the pineapple and ginger juice mixture. Stir well before serving.
