In a pan over medium heat, cook apples with sugar, cinnamon, flour, lemon juice, and butter till soft and thick, about 8 mins.

Put the apple mix in a bowl to cool off fully before moving on.

Roll the puff pastry sheets out and cut them into squares about 12 cm across.

Drop a spoonful of the cooled apple mix in the middle of each square; fold over diagonally to make triangles.

Use a fork to press down the edges tight so none of the filling escapes.

Paint each turnover with the egg mixture and sprinkle on the coarse sugar.

Place turnovers on a lined baking sheet and bake in a 200°C (about 400°F) oven for 18 to 22 mins till golden and puffed.

Mix the icing sugar, milk, and vanilla. Drizzle over the turnovers once they’ve cooled if you want.
