Crispy Sausage Asparagus Farfalle (Print Version)

01 - 1 pound farfalle pasta
02 - 1 tablespoon olive oil
03 - 1 pound Italian sausage, sweet or hot
04 - Kosher salt and pepper, to taste
05 - 1 sweet onion, diced
06 - 4 garlic cloves, minced
07 - 1 pound asparagus spears, cut into thirds
08 - ⅔ cup starchy pasta water
09 - ½ cup finely grated parmesan cheese
10 - 8 ounces burrata cheese
11 - Crushed red pepper flakes, for serving

# Steps:

01 - Bring a pot of salted water to a boil. Cook the farfalle according to the package directions. Reserve 1 cup of starchy pasta water.
02 - While the water is boiling, heat olive oil in a pan over medium heat. Add the sausage, season with salt and pepper, and brown until crispy and broken apart. Transfer it to a plate.
03 - Add onions, garlic, and a pinch of salt and pepper to the same pan. Cook for 5 minutes, stirring often.
04 - Add the asparagus spears to the pan. Cook, stirring often, until tender, about 6 to 8 minutes. Add another pinch of salt and pepper.
05 - Add the cooked farfalle to the pan. Pour in ⅔ cup of starchy pasta water. Stir in the parmesan cheese until well combined.
06 - Pull apart the burrata and toss it into the pasta. Top with crushed red pepper flakes and serve immediately.
