01 - Put the lid on and let the slow cooker do its thing on low for 6 to 8 hours or high for 3 to 4 until the chicken's super tender.
02 - Take out the chicken thighs, pull them apart with forks, then toss the shredded meat back in so it soaks up all the sauce.
03 - Stir together the soy sauce, brown sugar, garlic, olive oil, salt, black pepper, and red pepper flakes in a bowl until smooth.
