Turn the oven to 190°C (375°F).

Put ground beef, spinach, garlic, breadcrumbs, egg, Parmesan, salt, and pepper in a big bowl and mix gently. Don’t overdo it or it gets tough.

Grab some mix, press it flat, pop a mozzarella cube inside, and roll it into a ball. Keep going until you’ve used all the mix.

Heat olive oil in a pan on medium. Cook meatballs, turning often, till they’re browned all over. Should take about 5 to 6 minutes.

Put the browned meatballs in a baking dish and bake for 10 to 12 minutes. They’re done when the middle hits 71°C (160°F).

Dish out the meatballs and add some marinara sauce if you like. You can sprinkle extra Parmesan or fresh basil on top.
